What is Roman pizza? Find out at new spot on the Sixteenth Street Mall

The restaurant: Sofia’s Roman Pizza, 1530 16th Street Mall

About: The fast-casual restaurant serves square, bready “Roman-style” pizza slices, along with salads and Italian-inspired cocktails, beer and wine. Sophia’s is part of a small Denver-based restaurant concept company called Work + Shop, which has a few other food and beverage businesses, including a coffee shop and a barbecue restaurant, in Seattle and Colorado.

What’s on the menu: Pizzas are ordered at the counter and cut by the square — a half pan is six squares and a full pan is 12. There are nine kinds, including pepperoni, gorgonzola and chile honey; Italian sausage and potato; and a mixed mushroom with cremini and maitake king. Roman-style pizza is typically eaten by the slice and is common in shops all over the Italian city. Sophia’s also serves a variety of upscale salads and classic Italian cocktails and wines.

Who’s cooking: The owners of Sophia’s worked with “old friend and world-renowned baker” Alen Ramos of Poulette Bake Shop in Parker to create a recipe for the pizza dough, which “starts with an ancient flour called Yecora Rojo that, along with a 36-hour ferment, creates the crumb, affectionally known as the honeycomb,” according to a statement from Work + Shop. “The honeycomb has micro-holes that make the pizza light and easily digestible.”

What else: The 2,600-square-foot restaurant was designed by Wunder Werks and features a pink and green color palette and plants from the ReRoot boutique. There is room for 45 people inside and another 24 on the patio. Sophia’s is open from 10:30 a.m. to 9 p.m. Monday through Thursday and from 10:30 a.m. to 10 p.m. on Fridays. Weekend service is coming soon, the restaurant said.
